These tangy, crunchy radish strips make a wonderful accompaniment to porridge, steamed buns, or bread. It is a practical way to preserve radishes when they are in season, allowing you to savor their crisp texture and piquant flavor over many weeks.

Ingredients

White radish 1000g
Salt 6g
Dried chili peppers 30g

Instructions

Step 1

Prepare white radish, dried chili powder, salt, and a clean, water-free glass sealing jar;

Peel the white radish, wash it clean, and cut it into strips;

Place the cut radish strips in a basket and air-dry in a ventilated place until half dry;

Arrange the air-dried radish strips as shown in the picture, using a large plate to hold them;

Chop the dried chili peppers;

Add salt and chili powder to the radish strips together and mix well;

Pack into the glass jar and press down firmly; the glass jar must be water-free, oil-free, and clean.

Seal and let sit for 10 days, or a longer period of time.

This pickled side dish goes very well with porridge, steamed buns, or bread. When radishes are cheap, you can buy more to pickle and eat slowly.
