Step 1
Prepare white radish, dried chili powder, salt, and a clean, water-free glass sealing jar;

Peel the white radish, wash it clean, and cut it into strips;

Place the cut radish strips in a basket and air-dry in a ventilated place until half dry;
Step 4
Arrange the air-dried radish strips as shown in the picture, using a large plate to hold them;
Step 5
Chop the dried chili peppers;
Step 6
Add salt and chili powder to the radish strips together and mix well;
Step 7
Pack into the glass jar and press down firmly; the glass jar must be water-free, oil-free, and clean.
Step 8
Seal and let sit for 10 days, or a longer period of time.

This pickled side dish goes very well with porridge, steamed buns, or bread. When radishes are cheap, you can buy more to pickle and eat slowly.
