Prepare the aromatics
Dice the onion into small, even pieces. Mince the garlic and set aside. Have your chili powder, ground cumin, and cumin seeds mixed together in a small bowl.
Bloom the spices
Heat oil in a wok or large skillet over medium-high heat until it shimmers. Add the spice mixture and stir constantly for about 30 seconds until fragrant and the oil turns reddish. Be careful not to burn the spices.
Cook the pork
Add the ground pork to the wok, breaking it apart with a spatula. Cook for 5-7 minutes until the pork is no longer pink and the moisture has evaporated. The edges should get slightly crispy.
