Cured Pork and Preserved Olive Clay Pot Rice

Ingredients

Cured pork (washed, sliced, mixed with shredded ginger and seasonings) 80 g
Preserved olive 20 g
Fragrant rice (washed, soaked for 30-45 minutes) 200 g
Choy sum (washed, tops and tails trimmed) 4
Shredded ginger 5 g
Chopped scallions 5 g
Peanut oil a pinch
Seasonings (including 1 tsp peanut oil, black pepper to taste) to taste
Seasoning sauce (premium soy sauce (can also be mixed with sautéed scallion, garlic, sliced chili, oyster sauce and other seasonings, heated and mixed well)) to taste

Instructions

Step 1

Wash the cured pork and slice it, mix with shredded ginger and seasonings; wash the fragrant rice and soak for 30-45 minutes; wash the choy sum, trim off the tops and tails.

Step 2

Place the clay pot in the cooker base, add the fragrant rice using the rice measuring ladle, add one scoop of hot (or cold) water using the water measuring ladle, add a pinch of peanut oil. Press the start switch (red light illuminates).

Step 3

When the yellow light stops flashing, open the lid, add the cured pork and preserved olive, then close the lid.

Step 4

When the green light stays on, take out the clay pot, blanch the choy sum until cooked and arrange around the edge, sprinkle with chopped scallions, drizzle with seasoning sauce and serve.
