Story

Fried rice is the ultimate solution for using up leftover rice. This recipe allows you to incorporate any vegetables you have on hand, making it a versatile and satisfying meal.

Ingredients

cold cooked rice 2 cups
eggs 2 large
mixed vegetables (e.g., carrots, peas, corn) 1 cup, diced
vegetable oil 2 tbsp
salt to taste
soy sauce 1 tbsp

Instructions

1

Prep the Rice and Veggies

Ensure your rice is cold and leftover from a previous meal for the best texture. Break up any clumps with a fork. Dice your chosen vegetables into small, even pieces.

2

Sauté Vegetables

Heat the oil in a wok or large skillet over medium-high heat. Toss in the diced vegetables and stir-fry for 2-3 minutes until they are tender-crisp. Season lightly with salt.

3

Cook the Rice and Egg

Add the cold rice to the pan and stir-fry for a few minutes until it is heated through. Beat the eggs in a small bowl, then pour them evenly over the rice. Stir constantly until the eggs are set and coat the grains. Finish with soy sauce, mix well, and serve hot.
