Step 1
Prepare all ingredients, cut the beef into chunks.
Step 2
Cut carrots and potatoes into rolling-cut chunks, set aside.
Step 3
Cut the brisket into chunks, blanch briefly, rinse off the blood foam, then rinse thoroughly with cold water and set aside.
Step 4
Heat oil in a pan, add scallions and ginger, stir-fry briefly, then add the brisket and stir-fry for about 3 minutes.
Step 5
Transfer the stir-fried brisket to another pot; I used a rice cooker.
Step 6
Add enough water to cover the brisket.
Step 7
Add a spoon of Chinese cooking wine, cover the pot, and braise for 1 hour.

Heat oil in a wok, add the carrots and potatoes, stir-fry until fragrant, then set aside.
Step 9
After 1 hour, pour the carrots and potatoes into the pot to cook together with the beef brisket.
Step 10
Pour in the curry powder, then continue to braise for approximately 20 minutes.

Once the carrots and potatoes are fully softened, add the coconut milk. You can add a small spoonful of sugar, then cook for 10 minutes and it is ready.
