Story

A beloved staple of Chinese bakeries, this soft honey bread features a tender, slightly chewy crumb and a delicate natural honeyed sweetness, perfect for a comforting breakfast paired with tea or a quick, satisfying snack at any time of day.

Ingredients

high-gluten flour 200g
milk 80g
1 egg
white sugar 30g
salt 2g
yeast 3g
butter 15g
honey (for brushing the surface) to taste

Instructions

Step 1

Prepare all ingredients.

Add all ingredients except butter and honey into the stand mixer bowl, place sugar and salt on opposite sides, and put yeast on the very top.

First knead the dough on low speed (speed 1) for 1 minute, then switch to high speed (speed 3) to continue kneading until the machine stops automatically. (Total 15 minutes)

Add butter during the second kneading cycle, continue running the mixer at speed 3 to knead the dough at high speed until it stops automatically, then run the kneading program once more until the machine stops. (Total 30 minutes)

Total kneading time is 45 minutes, this is the glove film kneaded out.

Cover with plastic wrap and place in a warm area to ferment until the dough expands to 2 to 2.5 times its original size.

Dip your finger in flour and gently poke the dough; if the indentation does not shrink back or spring up, the fermentation is successful.

Put the dough directly back into the stand mixer and knead for a few minutes, which is equivalent to degassing the dough.

Evenly kneaded dough is divided into small equal-sized portions, covered with plastic wrap and left to proof for 20 minutes

Line a baking tray with aluminum foil, knead the dough portions into smooth round shapes and arrange them on the tray

Proof for a second time until the dough doubles in size

Place in a preheated oven, set the top heat to 120°C and bottom heat to 150°C, bake on the middle rack for 20 minutes (cover with aluminum foil once the surface reaches a satisfactory golden color, and continue baking until fully done)

After removing from the oven, brush a layer of honey on the surface and the dish is ready
