Ingredients

a bientot toast (bun) 1 piece
mustard butter to taste
thick-cut Vienna sausage (cut slits in the sausage, pan-fry/grill) 1 piece
ground meat curry (needs to be prepared in advance) 29g
vinegar-pickled cabbage (needs to be prepared in advance) 25g
Canton lettuce 10g
parsley 1g
celery

Instructions

Preparation: Thick-cut Vienna Sausage

Make slits in the sausage, then pan-fry/grill.

Preparation: Ground Meat Curry

Sauté garlic (1 clove) and red chili (1) in olive oil until fragrant, add finely chopped onion (4), carrot (1) and celery (1) and stir-fry, season with salt and pepper. Add bouillon cubes (2) and continue stir-frying until the moisture is completely absorbed. Add mixed pork and beef ground meat (300g) and stir-fry, then pour in wine and simmer for about 5 minutes. Add canned whole tomatoes (1 can) and bay leaves, simmer over medium heat for 20 minutes, finally season with salt and stir in curry powder (2 tablespoons) until well combined.

Preparation: Pickled Cabbage

Shred cabbage (300g) into thin strips, wash thoroughly with water, add salt and rub by hand until softened. Drain the water, add wine vinegar (30g), salt (20g), minced garlic (2 cloves) and red chili (1), then let sit overnight.

Method

Cut the bread open lengthwise, spread with mustard butter, layer a bed of mâche (lamb's lettuce), and fill with the curry, pickled cabbage, and thick-cut Vienna sausage.
