Daliang Stir-Fried Fresh Milk
Snow-white in color, light and fresh with a milky flavor, this dish is best suited for spring as a Cantonese specialty.
Ingredients
fresh milk
325 g
fresh straw mushrooms
20 g
water chestnut starch
40 g
egg whites
6
MSG
12.5 g
fine salt
a pinch
pork fat (keep on low heat with warm oil)
to taste
diced duck liver
a pinch
Instructions
1
Prepare the batter
Combine the fresh milk with the egg whites, water chestnut starch, fine salt, and MSG until smooth, then mix in the straw mushrooms.
2
Stir-fry
Heat an iron wok and add the pork fat (maintain a low heat with warm oil). Pour the milk-and-egg mixture along with the diced duck liver into the wok and push/stir evenly. If the flame is too fierce, briefly lift the wok off the heat — the goal is simply to gently cook the milk and egg until tender.
