Dangshen Turtle Soup

Ingredients

turtle meat, cleaned (blanched, black membrane and claws removed, cut into chunks) 600 g
lamb meat, cleaned (washed, cut into chunks) 200 g
codonopsis root (dusted clean, sliced, placed in a cheesecloth bag) 12 g
angelica root (dusted clean, sliced, placed in a cheesecloth bag) 10 g
goji berries (washed) 10 g
rock sugar 15 g
scallion knots 20 g
ginger slices 10 g
white pepper powder 1 g
MSG 1 g
fine salt 5 g
rendered pork lard 70 g

Step 1

Wash the lamb. Blanch the turtle meat in boiling water, peel off the black membrane from the surface, and chop off the claws. Place the turtle and lamb in a pot of clear water and boil for two to three minutes, then remove and rinse with clean water two to three times. Cut them into 2.5 cubic centimeter chunks with a knife. Dust the codonopsis and angelica clean, slice them, place them in a cheesecloth bag and seal it. Slice the ginger and wash the goji berries.
