Fruit Bars with Lemon Glaze

Ingredients

Puff pastry (ready-made) 250 g
Low-protein/cake flour 90 g
Oatmeal (fine or medium) 75 g
Baking powder 1 tsp
Light brown sugar/black sugar 125 g
Eggs 2
Butter (diced) 150 g
Lemon zest (finely grated) 1
Raisins (Smyrna type) 90 g
Powdered sugar (for glaze) 150 g
Lemon juice (for glaze) 3-4 tsp

Preheat oven

Preheat oven to 190°C (th. 6) and preheat baking sheet. Grease a 28 x 18 cm shallow pan thoroughly.

Prepare base

Roll out the puff pastry thinly on a lightly floured work surface. Line the bottom of the pan, pulling the edges up; uneven edges are fine.

Mix batter

Put flour, oatmeal, baking powder, sugar, eggs, butter, and lemon zest into a bowl. Beat with an electric mixer for 2 minutes until smooth. Stir in raisins.

Bake

Pour mixture into the pan. Smooth the top with the back of a spoon (including corners). Place the pan on the preheated baking sheet and bake for 30 minutes until the cake starts to turn golden and the surface feels firm.

Make glaze

In a bowl, mix powdered sugar with enough lemon juice to make a light, flowing glaze.

Decorate and cut

Drizzle the glaze over the hot cake in diagonal lines with a teaspoon. Cool in the pan. Once the glaze is completely hard, cut the cake lengthwise into two halves, then cut each half into 8 equal strips.
