Ingredients

Buttercream Frosting (recipe on p.118) to taste
Royal Icing (recipe on p.118) to taste
White Rolled Fondant (for covering and decorations) 77 oz
Gum-Tex (added to 30 oz fondant) 3 tsp
Thin Fondant Glue (recipe on p.119) to taste
Green, Gold, and Silver Pearl Dust (for decorations) to taste
Meringue Powder (for royal icing) to taste
Piping Gel (for decorations) to taste
Red Colored Sugar (for decorations) to taste

Instructions

Prepare 2-3 Days in Advance

Prepare the fondant decorations. Add 3 tsp Gum-Tex to 30 oz fondant. Color: 12 oz green, 8 oz gold, and 8 oz silver (with a little black); reserve 2 oz white. Meanwhile: make the star topper and decorations; attach the decorations to the plate (p.125). Also make the leaves and berries (p.126)

Prepare the Cake

Bake and cool the single-tier cakes. Prepare and cover with 48 oz pale green fondant (p.119). Prepare the dowel structure for insertion (p.116); use 6-inch and 8-inch plates to mark the dowel positions on the 8-inch and 10-inch cakes

Trim the Dowels

Trim 8 hidden dowels to 5½ inches tall for the top two tiers; trim 4 dowels to 3½ inches tall for the bottom tier

Party Assembly

Assemble the cake, attaching the leaves and berries with thin fondant glue. Insert the star topper. Serves 30
