Ingredients

green pepper (chopped) 1 medium
onion (chopped) 1 small
vegetable oil 2 tablespoons
potatoes (peeled, cooked and diced (about 1 pound)) 3 medium
cooked steak (diced (about 1 cup)) 1
garlic powder 1/4 to 1/2 teaspoon
Salt and pepper to taste
shredded Monterey Jack cheese 1/4 cup
eggs 4

Instructions

Sauté and Combine

In a skillet, heat the vegetable oil and sauté the chopped green pepper and onion until softened. Stir in the diced cooked potatoes. Reduce heat to low; cover and simmer for 10 minutes, or until the potatoes are heated through, stirring occasionally. Add the diced cooked steak, garlic powder, salt, and pepper. Top with the shredded Monterey Jack cheese.

Finish and Serve

Cover and continue to simmer on low for 5 minutes, or until everything is heated through and the cheese is melted; keep warm. Prepare the eggs to your preference. Divide the steak hash among four plates, and top each serving with one prepared egg.
