Delicious Double Ear Fungus
A Korean-style cold dish featuring black fungus and white fungus as the main ingredients, paired with cucumber, cilantro, and hawthorn cake. Sweet, spicy, and refreshing, with a striking black-and-white contrast.

Prepare the wood ear fungus and cucumber
Wash the cucumber, peel it, and cut into small diamond-shaped slices. Wash the cilantro and cut into 2 cm long segments. Clean the wood ear fungus and tear it into pieces. Then blanch the cucumber and wood ear fungus in boiling water until just done, remove, rinse with cold water, drain well, and arrange on one side of the serving plate.
Pour sauce over the wood ear fungus
Heat a wok and add the sesame oil. Stir-fry the Sichuan peppercorns until they turn dark, then remove them. Add the shredded scallion, shredded ginger, minced garlic, and chili sauce, stir well, then pour the mixture over the wood ear fungus. Cover with a bowl and let sit briefly, then uncover, sprinkle with the cilantro segments and MSG, mix well, and arrange on one side of the serving plate.
Prepare the white fungus and hawthorn cake
Cut the hawthorn cake into small pieces. Remove the root of the white fungus, wash it, tear the large pieces apart, briefly scald with boiling water, and arrange on the other side of the serving plate.
Pour the sugar syrup
Place 500 ml of water in a wok and bring to a boil. Add the white sugar and rock sugar and dissolve. Skim off the foam, then pour over the white fungus. Top with the hawthorn slices and serve.
