Diced Chicken with Crushed Peanuts

Ingredients

Chicken breast meat (cut into small dice) 200 g
Fried peanuts (crushed) 100 g
Egg (use egg white) 1
Pickled chili (chopped) 15 g
Lard 50 g
Sesame oil 5 g
Soy sauce 20 g
Cooking wine 20 g
Salt 3 g
Scallion (split and diced) 15 g
Sugar 25 g
MSG 3 g
Wet cornstarch 20 g
Vinegar a pinch
Broth a pinch
Ginger to taste

Preparing the chicken

Cut the chicken into small dice about the thickness of a chopstick tip, mix well with cooking wine and salt, then coat with a thin batter made from egg white and wet cornstarch, and mix in some sesame oil.

Preparing ingredients and sauce

Split the scallions and dice them, chop the pickled chili, and crush the peanuts. Combine cooking wine, sugar, MSG, wet cornstarch, soy sauce, vinegar, and ginger into a sauce.

Stir-frying

Heat oil in a wok, add the chicken dice and stir to separate them, then add the pickled chili and stir-fry a few times. Pour in the prepared sauce, and once it comes to a boil, add the peanuts, toss a few times, and it is done.
