Dry-Fried Green Beans

A classic Sichuan home-style stir-fry of green beans with minced meat and pickled mustard greens.

Dry-Fried Green Beans

Ingredients

green beans (remove strings, break in half) 500 g
ground pork (finely diced) 80 g
ya cai or dong cai (rinsed, drained, and finely diced) 50 g
soy sauce 1/2 tbsp
salt 2/5 tsp
MSG 1/5 tsp
cooking wine 1 tsp
rendered pork fat 25 g

Instructions

Prepare the green beans

Remove the strings from the green beans and break them in half.

Prepare the pork and ya cai

Finely dice the pork. Rinse the ya cai, squeeze out excess water, and finely dice.

Stir-fry the pork

Heat oil in a wok, add the ground pork and stir-fry until the moisture has evaporated. Add the diced ya cai and stir-fry until fragrant, then remove and set aside.

Stir-fry the green beans

Heat the wok and add the rendered pork fat. Add the green beans and stir-fry until they are completely dry, then set aside.

Combine and finish

Return the pork and ya cai to the wok, pour in the cooking wine, and stir-fry until dry and fragrant. Add the soy sauce, salt, and MSG, toss to combine evenly, and serve.
