Diced Chicken with Honey Tangerine

Ingredients

raw chicken breast (cut into 1.5 cm cubes) 200 g
fresh honey tangerines (peeled, pitted, cut into evenly sized cubes) 100 g
egg white 1 (approx 25 g)
fine salt 1.5 g
MSG 1.5 g
Shaoxing wine 10 g
wet starch (for marinating) 20 g
lard (for frying) 750 g (actual usage 75 g)

Instructions

1

Marinate the diced chicken

Cut the chicken breast into 1.5 cm cubes, add salt, egg white, and Shaoxing wine, stir well, then add wet starch and stir to coat. Set aside.

2

Prepare the tangerine cubes

Peel and pit the honey tangerines, then cut them into evenly sized cubes.

3

Stir-fry the chicken

Place a wok over medium heat, add lard and heat to 40% (approx 88°C). Add the diced chicken and stir to separate the pieces. When the chicken turns opaque white, pour it into a colander to drain excess oil.

4

Finish the dish

Leave a small amount of oil in the wok, add the diced chicken, then add MSG and a small amount of broth. Finally, add the tangerine cubes, stir-fry evenly to combine, then transfer to a plate and serve.
