Dog Meat Soup
Traditional Korean savory dog meat soup (Meidi recipe), served with sesame, chili oil, and beaten egg.

Slaughter and Processing
Korean method of slaughtering dogs: 1. After bleeding the dog, skin it whole or remove the hair; 2. Hang the dog, pour 1 cup of water into its mouth to suffocate it, then use a sharp knife to cut open the femoral artery in the hind legs to bleed it out, then use hot water to remove the hair
Meat Preparation
After hair removal, open the belly and remove the entrails, wash with cold water, cut into 6 large chunks, and soak in cold water. Then place the soaked bone-in meat chunks in a pot of boiling water, bring to a rolling boil over high heat, reduce to low heat and simmer until cooked, skim off the floating oil, and set aside.
Making Chili Oil
Heat a wok, add soybean oil, heat for 5 seconds, then add the skimmed oil and chili powder, stir-fry evenly until fragrant, then transfer the chili oil to a bowl and set aside.
Assembling the Soup Bowl
Take 500 g of cooked dog meat, debone while hot, shred the meat into thin strips, mix with roasted sesame, chopped scallion, white pepper, and soy sauce, and marinate for half an hour. Place in a bowl, add cilantro, salt, chili oil, and minced garlic, pour the boiling original soup over it, drizzle with beaten egg, and serve immediately.
