Dongpo's Shepherd's-Purse Soup
A nourishing vegetarian dish first created by Su Shi in Huangzhou, simmered with shepherd's purse, rice, and ginger, yielding an exquisitely sweet and aromatic flavor.
Ingredients
shepherd's purse (cleaned and trimmed)
1-2 sheng (approximately)
rice (washed)
3 ge
cold water
3 sheng
ginger (unpeeled, smashed)
two-finger-sized piece
raw oil
1 clam-shell
Instructions

Simmer into a thick soup
Place the trimmed shepherd's purse, washed rice, cold water, and unpeeled smashed ginger together into a pot.

Drizzle the oil
Pour one clam-shell of raw oil over the surface of the soup; do not stir it in, for once stirred the aroma of the raw oil will dissipate.

No salt or vinegar may be added.
