Donuts
Crispy on the outside and soft in the middle, these fried doughnuts have a rich, cake-like texture.

Creaming butter and sugars
In a steel bowl, add the butter, granulated sugar, powdered sugar, and salt, and whisk thoroughly until smooth and silky. Then pour in 1/2 of the egg-milk mixture and stir until smooth and even.
Combining the batter
In another larger steel bowl, sift in the cake flour and baking powder, and use your hand to make a slight well in the center. Pour in the mixture from step 1, then pour in the remaining egg-milk mixture. Use a rubber spatula to fold the surrounding flour toward the center, mixing as you stir.
Chilling and resting
Stir until no dry flour remains, then bring together into a dough. Note: do not over-knead the dough, or it will become hard. Once the dough comes together, wrap it in plastic wrap and chill in the refrigerator for 30 minutes to 1 hour to let it relax.
Rolling and cutting
Lay baking paper on the work surface, sprinkle with anti-stick flour, then place the dough on top. Sprinkle anti-stick flour on both the surface of the dough and the rolling pin, then roll the dough out to about 1-1.5 cm thick. Use a donut cutter about 7 cm in diameter to cut out the rounds. Gather the remaining dough into a ball, roll it out again, and repeat the process.
Frying
Heat the frying oil to a medium temperature (about 165-170°C; when the tip of a chopstick is dipped into the bottom of the pot, small bubbles should slowly rise). Drop in 2-3 dough pieces at a time, using chopsticks to turn the donuts occasionally so both sides color evenly.
Decorating
Once fried, immediately remove and place on a wire rack to drain the oil. Place the granulated sugar for decoration on a flat plate, and while still hot, coat both sides of the donuts with sugar.
