Ingredients

Dried round cabbage (washed and drained) 100 g
Pork tripe (washed, membranes removed, cooked and sliced) 1/2
Snow peas (ends trimmed, tough strings removed, washed) 6
Flour (for scrubbing the tripe) 2 tbsp
Salad oil (for scrubbing the tripe) 1 tbsp
Salt (for scrubbing the tripe) 1 tbsp
Salt (for seasoning) 1 tsp

Instructions

Step 1

Trim the ends off the snow peas and remove the tough strings, then rinse well. Wash the dried cabbage and drain it; set aside.

Step 2

Wash the pork tripe. Place it in a large bowl, add seasoning (1) and rub to strip away the inner and outer membranes. Then add seasoning (2) and rub to remove impurities. Remove the tripe, rinse thoroughly under running water, then drop it into boiling water and cook until tender. Lift out, slice thinly, and set aside.

Step 3

Pour 4 cups of water into a pot and bring to a boil. Add the dried cabbage, pork tripe, and seasoning (3), then bring back to a boil. Reduce the heat to low and simmer until the tripe is soft. Add the snow peas and cook until just tender, then serve.
