Ingredients

winter melon 1 pound, peeled and seeded
dried shrimp 1/4 cup
fresh ginger 1 tablespoon, julienned
cilantro 2 tablespoons, chopped
vegetable oil 2 tablespoons
water or chicken broth 5 cups
salt 1/2 teaspoon
chicken powder 1/4 teaspoon
sesame oil 1 teaspoon

Prep the ingredients

Cut the winter melon into bite-sized chunks. Give the dried shrimp a quick rinse under cold water. Slice the ginger into thin strips and roughly chop the cilantro leaves.

Bloom the aromatics

Heat vegetable oil in a large pot over medium-high heat until shimmering. Add the ginger and dried shrimp, stir for about 30 seconds until fragrant.
