Dried Shrimp Cucumber Vermicelli Salad

Ingredients

Cucumber (cleaned, cut into thin shreds, lightly salted with a pinch of fine salt for a short while, then drained) 200 g
Soaked vermicelli (squeezed dry, cut into 3 cm segments) 100 g
Vinegar 10 g
Soy sauce 5 g
Fine salt to taste
MSG to taste
Chopped green onion to taste
Sesame oil to taste
Soaked dried shrimp to taste

Prepare the ingredients

Clean the cucumber and cut it into thin shreds. Add a pinch of fine salt and let it sit briefly, then drain off the liquid and place in a bowl. Squeeze the excess water from the soaked vermicelli, cut it into 3 cm segments, and lay the vermicelli on top of the cucumber shreds. Finally, scatter the soaked dried shrimp over the vermicelli.

Mix the dressing and combine

Combine the chopped green onion, fine salt, MSG, vinegar, and soy sauce in a small bowl and whisk together to make a dressing. Pour the dressing evenly over the cucumber and vermicelli.
