Step 1
First, pick the bok choy clean, cut it into 1.5 cm segments with a straight knife, and blanch in boiling water until cooked. Remove from the water, drain off excess moisture, toss evenly with salt, and arrange on a plate.

Soak the dried shrimp until soft, cut into small pieces with a straight knife, and mix with the bok choy segments. Finally, mix the soy sauce, vinegar, sesame oil, chopped scallions, and minced ginger into a sauce, pour it over the vegetables, and toss evenly to serve.
