Drunken Clam Meat
A signature Min (Fujian) cuisine dish: fresh live clams are shucked and marinated in sorghum wine for 3 hours, resulting in a fresh, fragrant, and crisp flavor.

fresh live clams (shucked, cleaned, and cut into small pieces)

Instructions

Marinating
Shuck and clean the live clams, cut them into small pieces, place in a bowl, pour the sorghum wine over them, mix well, and marinate briefly.

Drunken Soaking
In a small bowl, mix the soy sauce, sugar, and sesame oil together; add the seasoning. Pour in the aromatic vinegar along with the clam pieces, stir-fry and combine evenly, then marinate in the wine mixture for 3 hours until done.
