A traditional Huaiyang cold appetizer of jellyfish skin, cut into a Buddha's hand shape and tossed with drunken male crab oil for a fresh, crisp texture.

Drunken Crab Roe with Buddha's Hand Jellyfish

Ingredients

Drunken male crabs (extract crab roe, discard crab meat) 3
Aged jellyfish skin (washed, cut into Buddha's hand shape) 500 g
Fine salt (for soaking jellyfish skin) a pinch

Extract Crab Roe

Scoop out the roe/oil from the drunken male crabs (discard the crab meat).

Prepare Jellyfish Skin

Wash the jellyfish skin thoroughly and cut it into Buddha's hand shapes. Briefly blanch in hot water, then remove and rinse. Soak in cold boiled water with a small amount of salt.

Combine

Place the crab roe together with the jellyfish skin, add a small amount of drunken crab meat, and mix well to serve.
