Dry-Fried Bitter Melon

Bitter melon and green peppers are each dry-fried to release their moisture, then tossed together with vegetable oil and salt until evenly coated. The finished dish carries a mildly bitter and spicy flavor.

Dry-Fried Bitter Melon

Ingredients

Bitter melon (pith and seeds removed, bias-sliced) 500 g
Rapeseed oil 75 g
Salt 2.5 g
Green bell pepper (cut into arrow shapes) 100 g

Step 1

Remove the stem from the bitter melon, halve each one lengthwise, scoop out the pith and seeds, then slice on the bias into pieces about 5 cm long and 1.5 mm thick. Cut the green bell pepper into arrow-shaped pieces about 1.5 mm thick.

Step 2

Heat a wok. First dry-fry the green bell pepper until wilted, then scoop it out. Dry-fry the bitter melon until its moisture has evaporated, and scoop it out as well.

Wipe the wok clean, add the rapeseed oil and heat until hot, then add the bell pepper and bitter melon. Sprinkle with the salt, toss to combine evenly, and serve.
