Dry-Fried Crumbled Tofu
Crumble firm or soft tofu with a spoon, then stir-fry in batches with oil until golden and dry-fragrant. Add the seasonings and toss to combine.
Ingredients
soft tofu
3 blocks (or 2 with firm tofu)
soy sauce
15 g
cooking wine
5 g
MSG
2 g
fine salt
3 g
minced scallion
2.5 g
minced ginger
2.5 g
sesame oil
100 g (about 80 g used)
Instructions

Step 1
Place the wok over high heat until hot, pour in 25 g of sesame oil, and heat to 60–70% hot. Add the tofu, break it apart and crumble it with a spatula, and stir-fry for 5 to 6 minutes. Watch the heat carefully and keep adding oil as you go (about 60 g in total), letting the oil slowly soak into the tofu.

Step 2
When the tofu has become fine crumbs, the moisture has evaporated, and the color turns golden, add the minced scallion, minced ginger, and salt, and stir-fry for another 2 minutes. Finally add the soy sauce, cooking wine, MSG, and the remaining 10 g of sesame oil, stir well, and serve.
