Ingredients

onion (finely diced) to taste
red chili (finely diced) to taste
shrimp (washed, blanched in boiling water until they turn pink, then plunged into cold water) to taste
shredded pork to taste
cooked white rice (cold, day-old) to taste
green peas to taste
egg (fried sunny-side up) 1
salt 1/6 tsp
chicken bouillon powder 1/4 tsp
sweet soy sauce 1 tbsp
satay sauce to taste
salad oil to taste

Instructions

1

Prep

Finely dice the onion and red chili and set aside. Wash the shrimp, then blanch them in boiling water until they turn pink on the outside. Remove with a slotted spoon and immediately plunge into a bowl of cold water. Drain and set aside.

2

Stir-fry the rice

Heat the salad oil in a wok over medium heat. Add the prepped onion, chili, and shredded pork and stir-fry quickly until the pork changes color. Add the cold cooked rice, green peas, and shrimp, followed by the seasonings. Continue to stir-fry over medium heat until the rice grains are dry, separated, and fragrant, then transfer to a serving plate.

3

Fry the egg and assemble

In a separate pan, heat a little more oil over medium heat. Crack in the egg and fry it sunny-side up until the white is set and the edges are lightly crisp. Place the fried egg on top of the plated fried rice and serve with satay chicken skewers on the side.
