Dry-Fried Dried Tofu

Ingredients

Dried tofu (cut to mahjong tile size) to taste
Sweet shrimp to taste
Sea pomfret to taste
Silver pomfret to taste
Clam to taste
Shredded ginger to taste
Scallion segments to taste
Seasoning sauce (mixed from minced garlic and light soy sauce) to taste

Instructions

Pan-fry dried tofu

Fry the dried tofu until both sides are golden brown, slightly crispy on the outside and tender inside, dip in the seasoning sauce before eating.

Prepare seafood

Add the sweet shrimp, sea pomfret, silver pomfret and other seafood in sequence, control the heat.

Clam foil packet

Wrap the shredded ginger, scallion segments and clam together in aluminum foil, place into a cast iron pot to heat.
