Prepare two egg whites.

Mix the almond flour and cake flour evenly.

Heat the butter over water.

Melt it into a liquid.

Place the egg whites into an oil-free and water-free bowl.

Add the powdered sugar in three batches, using a Qihua KS-935 hand mixer.

Beat until stiff peaks form.

Sift in the mixture of cake flour and almond flour.

Fold quickly to avoid deflating the batter.

Add the melted butter.

Fold quickly until evenly mixed.

Brush the mold with melted butter, then dust with cake flour.

Pour the cake batter into the mold until it is 2/3 full. Gently tap the mold to release any small air bubbles.

Preheat the oven to 175°C. Bake on the middle rack with top and bottom heat at 175°C for 15 minutes.
