Fancy Wheat Food Jujube Flower Cake

This steamed cake brings a warm, festive atmosphere to the kitchen, filling the home with the sweet aroma of milk and dates as it steams. The soft, fluffy dough and the natural sweetness of the red dates make it a comforting treat, perfect for sharing during holidays or as a special homemade snack.

Step 1
Prepare the ingredients! Wash the red dates and soak them for 1 hour in advance. (This recipe makes one large date flower cake; the yellow dough is not included in this recipe.)

Put room-temperature milk into the stand mixer bowl, add 30g sugar and 5g yeast, and stir with a spoon.
Step 3
Add 500g of medium-gluten flour.
Step 4
Assemble the stand mixer, plug in the power, turn to speed 2 to knead the dough, and it will be very smooth after 5 minutes.
Step 5
Take out the kneaded dough and knead it evenly, cover with plastic wrap and let it rest for 10 minutes; this date flower cake uses the one-rise method.
Step 6
Divide the large dough into one piece of 260g, one piece of 220g, and the remaining approximately 320g, which is reserved for the border.
Step 7
Cover the two divided dough pieces with plastic wrap and set aside; roll the remaining 320g into a thin long strip and cut into pieces of similar size.
Step 8
Take one piece and roll it into a strip about 8 cm long.
Step 9
Pat the dates dry with kitchen paper, take a small date and wrap it with the rolled strip, pinching the ends tightly to form a water droplet shape.
Step 10
Make several water droplet shapes to serve as the border for the date flower cake.
Step 11
Take the 260g dough piece, knead it evenly and roll it into a round shape, about the size of the 8-inch circle on a silicone mat; if you don't have a silicone mat, you can compare it with an 8-inch plate. Place the round dough sheet into a steam-roast pan lined with parchment paper; this type of pan has holes in the middle, just like our steamer for steaming buns, allowing air circulation. If you don't have a steam oven, place the dough sheet in a steamer lined with a damp cloth or parchment paper.

Arrange the water droplet border.

Arrange the dates in the center; you can also add red bean paste.

Roll the 220g dough into a slightly smaller dough sheet and cover the dates.

Arrange the remaining water droplet borders into a flower shape with a date in the middle as the flower center; the rest of the yellow dough can be shaped freely; if there is no yellow dough, white dough can be used for decoration.

Use the yellow dough to make a lotus leaf clip, with a date inside and a mesh pattern pressed on the outside with a clean comb; also made a flower shape.

Place the steam-roast pan into the ukoeoHQ62 steam oven (fill the water tank with purified water; do not use tap water as it will cause scale).
Step 18
Select 35°C on the steam oven for about 20-25 minutes; check the state; generally, do not let this type of shaped bun rise too much, or it will deform and affect the appearance; (for a steamer, put warm water not exceeding 40°C into the pot, place the steamer inside, cover the lid, and let rise).
Step 19
After the date flower cake has fermented, take it out, select the preheat steam function on the ukoeoHQ62 steam oven, 100°C for 5 minutes.
Step 20
Place the date flower cake in the middle of the steam oven, 100°C for 25 minutes; do not open the steam oven door immediately when the time is up, let it sit for 5 minutes before opening to prevent the date flower cake from shrinking like an old lady's face due to cold air. (For a steamer, place directly on the gas stove on medium-high heat to boil, then turn to medium heat and steam for 20-25 minutes, turn off the heat, let it sit for 5 minutes after turning off the heat before uncovering the lid, and take out the date flower cake).

After sitting, open the steam oven door and take out the steam-roast pan; when steaming buns in a steam oven, you don't have to worry about water droplets dripping onto the date flower cake, the surface is very smooth.
Step 22
Take out the date flower cake and place it on a cooling rack to dissipate heat; after cleaning the moisture inside the steam oven, the date flower cake will not dry out if left in the steam oven overnight because there is still some humidity inside; just reheat it the next day before eating.
