Feta Cheese Hummus Soup

Middle Eastern-style vegetarian soup featuring a chickpea purée with roasted red peppers and feta cheese. Serve hot or chilled.

Feta Cheese Hummus Soup

Ingredients

hummus 300 g, packaged
roasted red peppers (with juice) 450 g, canned
fresh cilantro (reserve some for garnish) small handful
smoked paprika (or freshly ground black pepper) 1/2 tsp
feta cheese 200 g (7 oz)

Make the soup base

In a large deep saucepan, mix the hummus with twice its volume of warm water (measure using a kettle container). Chop the red peppers and add them to the pan along with their juice. Add most of the cilantro (reserving some for garnish) and stir well. Bring to a boil, then partially cover and simmer on low heat for 5 minutes until very hot.

Blend and serve

Transfer the contents of the pan to a blender, add the paprika or pepper, and blend until smooth. Pour back into the pan and reheat for 2 minutes. Ladle into bowls, placing 2 strips of feta cheese and a sprig of cilantro in each bowl. Serve hot. Can also be served cold after chilling.
