Filipino-style meatloaf studded with raisins and a sweet-and-sour sauce, baked wrapped in foil, then sliced and served with banana sauce.

Step 1
Preheat oven to 375°F (approximately 190°C).

In a large bowl, soak bread cubes in milk for about 5 minutes until softened. Stir in the beaten egg and set aside.

Heat oil in a medium skillet over medium heat. Add chopped onion and minced garlic, sauté until onion is soft and translucent, 2-3 minutes. Add grated carrot and chopped red bell pepper, cook until heated through, 1-2 more minutes. Let the vegetable mixture cool for about 5 minutes.
Step 4
Add the cooled vegetable mixture to the bread mixture, then add ground meat, raisins, sweet relish, black pepper, and salt. Mix thoroughly until well combined.

Assemble the meat rolls: Lay a 12-inch square sheet of aluminum foil on a work surface. Spoon one-third of the meat mixture (about 2 cups) into the center of the foil. Shape into a 9x5 inch rectangle. Place 2 halved hard-boiled eggs on top of the meat pile, cut side down. Fold up the edges of the foil, shape the meat mixture into a cylinder, tucking the eggs inside. Wrap the foil completely around the meat, rolling it into a tight cylinder 2-3 inches in diameter. Twist the ends tightly to seal. Repeat the process with the remaining meat mixture and eggs to make 3 rolls total.

Place the wrapped meat rolls on a baking sheet and bake for 1 hour, until the center is no longer pink.
Step 7
Let cool completely before serving. To serve, unwrap the foil, slice the meat rolls into 1-inch thick pieces. Arrange diagonally on a plate to show the cross-section of the eggs. Serve with banana ketchup or Thai sweet chili sauce.
