A Shandong figurative dish featuring mashed yam wrapped around a date paste filling, shaped into longevity peaches and garnished with the character '寿' (longevity). Finished with a sugar glaze for a lifelike presentation and a sweet, crumbly, refreshing taste.
Ingredients
Instructions
Make the date paste filling
Wash the long red dates, boil them until soft, peel and pit them, and mash them into a paste. Place the paste in a wok, add the cooked pork lard and white sugar, and cook it down into a thick date paste filling.
Make the yam paste
Wash the Chinese yam, steam it until soft, peel it and remove any spots, then mash it into a fine paste with a knife.
Cut the garnishes
Cut the hawthorn cake into long strips. Finely mince the red shreds and green plum into even bits.
Shape the peach
Take a large plate and place the date paste filling in the center. Cover it with the yam paste, shaping it into a peach form with two leaves. Smooth the tip. Use the green shreds to outline the leaf veins. Arrange the hawthorn cake strips on the body of the peach to spell the longevity character. Sprinkle the red shred bits over the peach tip and lower half as garnish, and set a green plum on top as the peach stem.
Steam
Steam in a steamer for 5 minutes, then remove.
Pour the sauce
In a saucepan, add water and white sugar and dissolve over medium heat. Thicken with wet starch to make a thin sauce, and gently pour it over the longevity peach. Serve.
