Fish-Flavored Poached Eggs

Ingredients

eggs 500g
lard 50g
scallions (chopped into rings) 15g
ginger (minced) 5g
garlic cloves (minced) 5g
pickled chili (chopped) 10g
soy sauce 35g
sugar 20g
cooking wine 25g
MSG (monosodium glutamate) 5g
broth 50g
vinegar 15g
wet cornstarch 15g

Prepare Seasonings and Chop Ingredients

Mix the above seasonings (except pickled chili and oil) into a sauce. Chop scallions into rings. Mince ginger and garlic. Chop pickled chili.

Fry Eggs and Pour Sauce

Heat the wok and add oil. Once hot, crack eggs in batches and fry both sides until golden, then transfer to a plate. Leave a little oil in the wok, add the chili and stir-fry briefly, then pour in the prepared sauce. When the sauce bubbles, drizzle the bright oil over the eggs and serve.
