Bitter Melon with Fermented Black Beans

Ingredients

Bitter melon (remove stems, remove seeds, wash and cut into thin slices) 400g
Fermented black beans (soak in water, wash and crush) 15g
Dried small fish 20g
Garlic cloves (stir-fry until fragrant) 20g
Chili pepper (wash and cut into diagonal slices) half
Soybean oil 150g
Fine salt 5g
MSG 4g
Cold water as needed

Step 1

Remove the stems and seeds from the bitter melon, wash it and cut into thin slices; soak the fermented black beans in water, wash and crush them; wash the chili pepper and cut into diagonal slices

Step 2

Heat a wok over high heat, add the soybean oil and heat until hot. Stir-fry the fermented black beans, garlic cloves, and chili pepper until fragrant. Add the dried small fish, bitter melon, and water. Simmer over medium heat until fully cooked. Add salt and MSG to taste, mix well, and serve.
