This dish brings the classic fish-flavored profile to tender pork liver, balancing the rich organ meat with the crunch of wood ear mushrooms and carrots. The glossy sauce, infused with the aroma of bean paste and vinegar, coats every bite for a satisfying and hearty meal.

Ingredients

Pork liver about 350g
Hot pepper 1 piece
Carrot half
Wood ear mushroom appropriate amount
Pixian bean paste appropriate amount
Chopped chili appropriate amount
Light soy sauce 1 tbsp
Cooking wine 1 tbsp
Aromatic vinegar 2 tbsp
White sugar 1 tbsp
Starch 1 tbsp
Vegetable oil appropriate amount
Scallion a little
Ginger a little
Garlic a little
Chicken essence 1/3 tsp

Instructions

Step 1

First clean the whole piece of pork liver, then cut it into small thin slices, rinse repeatedly with clear water until the pork liver no longer releases blood water. Then add 1 tablespoon cooking wine, 1/2 small spoon white pepper powder, 2 tablespoons starch and mix well, marinate for about 20 minutes (forgot to take a picture of the marinating).

Soak the wood ear mushrooms in advance and tear into small pieces, peel the carrot and cut into diamond-shaped pieces, cut the hot pepper into small pieces.

Chop the Pixian bean paste, prepare the chopped chili, and mince the green onion, ginger, and garlic.

Add 1 tablespoon light soy sauce, 2 tablespoons vinegar, 1 tablespoon cooking wine, 1 tablespoon starch, 1 tablespoon white sugar, 2-3 tablespoons clear water, 1/3 small spoon chicken essence to a small bowl and mix evenly for later use.

Heat water in a pot, add the marinated pork liver and remove it immediately to drain once it changes color.

Heat the wok and add vegetable oil, add the green onion, ginger, and garlic to sauté until fragrant.

Add the Pixian bean paste and chopped chili and stir-fry until red oil appears.

Add the wood ear mushrooms and carrots and stir-fry evenly.

Add the pork liver and stir-fry evenly quickly.

Add the hot pepper and stir-fry evenly quickly.

Finally add the seasoning sauce and stir-fry a few times to coat the ingredients evenly, then turn off the heat.
