Plating and Seasoning

Squeeze out excess water from the shredded tofu and transfer to a serving plate, mounding it into a bun-like shape. Sprinkle the shrimp roe over the top and place the ginger shreds at the peak. Arrange the chicken shreds, cured pork shreds, pickled mustard shreds, bamboo shoot shreds, and dried shrimp around the sides. Stir the soy sauce and sugar together, pour along the edge of the plate, scatter the cleaned cilantro segments on top, and finish with a drizzle of sesame oil.
