Five-Spice Grilled Squid Rings

Ingredients

Fresh squid, cleaned 1 large (about 300g)
Salt 2 teaspoons
Black pepper ½ teaspoon
Five-spice powder ½ teaspoon
Chinese cooking wine (or dry sherry) 1 tablespoon
Breadcrumbs ½ cup
Cumin powder ¼ teaspoon
Olive oil 2 tablespoons

Prep the squid

Rinse the squid under cold water. Pull off the dark outer membrane and remove the internal quill. Pat completely dry with paper towels.

Cut into rings

Slice the squid body into ½-inch thick rings. Smaller rings will cook more evenly and crisp up nicely.

Marinate

Place squid rings in a bowl. Add salt, black pepper, five-spice powder, and cooking wine. Toss to coat evenly. Cover and refrigerate for 1 hour to let the flavors meld.

Make the coating

In a shallow dish, combine breadcrumbs, cumin powder, and a pinch of salt. Drizzle in a little oil and mix until evenly moistened.

Coat and grill

Preheat grill or grill pan to high heat. Press each marinated squid ring into the breadcrumb mixture, coating both sides. Grill for 2-3 minutes per side until golden brown and opaque. Serve immediately.
