Honey Pomelo Peel Tea
A soothing citrus tea made by simmering candied pomelo peels in honey. The aromatic peels transform into tender, sweet ribbons that create a deeply comforting drink, perfect for cold weather or when you need a vitamin C boost.

This tea captures the essence of winter comfort. The bitter peel of the pomelo, often discarded, becomes the star when slowly cooked in honey until tender. Red-fleshed pomelos give a beautiful orange-red hue, while yellow varieties produce a golden tea.

Prepare the pomelo
Rub the entire pomelo skin with salt to remove the waxy coating. Rinse thoroughly under running water. Pat completely dry.
Peel and slice
Use a vegetable peeler to strip off the colorful outer skin in long ribbons. Avoid the white pith beneath—it adds too much bitterness. Cut the peel strips into thin matchsticks about 3cm long.
Salt and drain
Toss the peel strips with salt and let sit for 30 minutes. This draws out excess moisture and tempers the natural bitterness. Rinse well and squeeze out water.
Simmer until tender
Add the peel strips to a pot with fresh water. Bring to a boil, then reduce heat and simmer for 20 minutes until the peels become translucent and tender. Drain and set aside.
Combine with honey
Return the drained peels to the pot. Pour in the honey and add a splash of water (about 100ml). Stir well and bring to a gentle simmer over low heat. Cook for 10 minutes, stirring occasionally, until the mixture thickens slightly.
Store and serve
Let the mixture cool completely. Transfer to a clean glass jar. Store in the refrigerator for up to one month. To serve, spoon 1-2 tablespoons into a mug and pour hot water over top.
