Story

These cute little cakes are perfect for using up ripe mangoes. The natural sweetness of the fruit shines through without needing much added sugar.

Ingredients

cake flour 50 grams
ripe mango puree 125 grams
large egg 1
granulated sugar 10 grams
vegetable oil 5 grams

Prep the mango base

Place the mango puree in a mixing bowl. Sprinkle in the sugar and stir until the sugar dissolves completely into the fruit.

Add the dry ingredients

Sift the cake flour directly over the mango mixture. Fold everything together using a gentle figure-eight motion until no visible flour remains.

Incorporate fat and egg

Drizzle in the vegetable oil and mix until absorbed. Crack in the whole egg and continue folding until you have a smooth, uniform batter.

Fill and bake

Divide the batter evenly among 4 greased muffin cups, filling each about three-quarters full. Bake in a preheated 350°F (175°C) oven for 20-22 minutes until a toothpick inserted in the center comes out clean. Let cool slightly before removing from the tin.
