Flower-shaped Red Bean Paste Bread
Bread made with a flower-shaped mold, with red bean paste filling in every piece — delicious and beautiful.

Step 1
Pour the ice water and beaten egg into the bread bucket in order, pour the sugar and salt into opposite corners, then add the milk powder and flour, and place the yeast on top of the flour. Set the bread bucket into the Dongling JD08 bread machine and select the kneading program for 13 minutes.
Step 2
After the first kneading ends, add the butter cut into small pieces and continue kneading for 17 minutes. Kneading times will vary depending on the bread machine model; knead until you can pull out a glove membrane. Press the kneaded dough flat, seal it in a plastic bag, and place it in the freezer for 1 hour.
Step 3
Place the red bean paste filling into a small plastic bag, fold the bag into a 20 × 14 cm rectangle, roll it flat with a rolling pin, then return it to the refrigerator to chill.
Step 4
Roll the frozen dough into a rectangle 20 cm wide and 28 cm long, and place the chilled red bean paste filling in the middle of the dough.
Step 5
Fold the top portion of the dough down to cover half of the red bean paste filling.
Step 6
Fold the bottom portion of the dough up, pinch the seams of the dough tightly, and pinch both sides tightly so that the filling does not show.
Step 7
With the seam side up, roll the dough out to a length of 40 cm, and thin out the bottom edge.
Step 8
Roll it up with the seam side facing down.
Step 9
Place the shaped dough in the flower-shaped mold, cover it with a lid (a 450 g loaf pan also works), and put it in the Dongling K40C oven to proof at 35°C for about 50 minutes (place a bowl of warm water inside the oven to provide humidity). This loaf pan has small holes on top; you can use a toothpick to check the proofing progress. Remove when it is 70–80% full.
Step 10
Preheat the oven for 13 minutes to 175°C, place the mold on the oven rack (set the rack on the lowest level), and bake for 35 minutes. The actual baking temperature should be adjusted to your oven's temperament.
