Yellow Croaker Thick Soup

Ingredients

Yellow croaker fillet (sliced into 4 cm long, 2 cm wide, 1 cm thick pieces) 200 g
Tender bamboo shoots (finely diced) 52 g
Cooked pork fat (cut into nail-sized slices) 25 g
Cooked ham (finely diced) 10 g
Egg (beaten and set aside) 1 (about 50 g)
Fine salt 4 g
MSG 3 g
Ginger juice water 10 g
Shaoxing wine 15 g
Minced ginger 3 g
Scallion segments 5 g
Wet starch (for thickening) 60 g
Cooked pork lard (for stir-frying and drizzling) 75 g
Clear broth (for cooking the fish slices) to taste

Prepare the ingredients

Slice the yellow croaker fillet into pieces 4 cm long, 2 cm wide, and 1 cm thick. Cut the pork fat into nail-sized slices. Finely dice the tender bamboo shoots and cooked ham. Crack the egg into a bowl, beat it, and set it aside.

Cook the soup

Place a wok over medium heat, add the cooked pork lard, and stir-fry the scallion segments and minced ginger until fragrant. Add the fish slices, then pour in the Shaoxing wine, ginger juice water, clear broth, diced bamboo shoots, fine salt, and pork fat slices. Once the liquid comes to a boil, skim off the foam.

Thicken and finish

Add the MSG and thicken the soup with the wet starch. Drizzle in the beaten egg and the remaining cooked pork lard, and gently stir everything to combine with a ladle.

Plate and serve

Transfer the soup to a soup plate, scatter the scallion bits and diced cooked ham on top, and serve immediately.
