Fortune Cookies
Chinese-style fortune cookies with handwritten fortune slips inside.
Ingredients
egg whites
2-3
fine granulated sugar
100 g (3½ oz)
salt
a pinch
vanilla extract
1/4 tsp
low-gluten flour
150 g (5 oz)
star anise powder
a pinch
melted unsalted butter
115 g (4 oz)
water
2 tbsp
Instructions
1
Mix the batter
Whisk the egg whites, sugar, and salt together. Add the vanilla, flour, and star anise powder, then stir in the melted butter and water until a smooth batter forms.
2
Chill
Refrigerate for about 30 minutes until the batter firms up.
3
Preheat
Preheat the oven to 175°C.
4
Shape and bake
Spread small amounts of batter into 8 cm circles on parchment paper, spacing them about 4 cm apart. Bake for 3-4 minutes until the edges begin to turn golden brown.
5
Form the cookies
Carefully lift each round with a spatula, place a fortune slip in the center, fold in half, and pinch the edges together to shape into a fortune cookie. Let cool until hardened.
6
Storage
If the cookies become too hard, return them to the oven for a few seconds to soften again.
