Four-Color Rolls

Japanese-style bread snack made by rolling four fillings—cheese, pork floss, ham, and corn kernels—into slices of toast.

Four-Color Rolls

Ingredients

bread flour 700 g
sugar 100 g
salt 20 g
fresh yeast 30 g
water 250 g
milk powder 30 g
butter 100 g
refrigerated liquid levain 600 g
cheese to taste
pork floss to taste
ham to taste
corn kernels to taste
mayonnaise to taste

Instructions

Make the toast

Refer to material A on page 16 for the white toast recipe and prepare two 900 g loaves of toast.

Prepare the toast

Trim the edges of the toast and cut it into 1.5 cm thick slices; set aside.

Roll in the fillings

Group the slices in fours. Spread a small amount of mayonnaise on each slice, then roll in cheese, pork floss, ham, and corn kernels, one filling per group.

Shape the rolls

Cut each roll in half without slicing all the way through, then arrange the rolls upright in paper cups.
