Four-Flavor Cold Noodles

Ingredients

noodles 500 g
cooked ham (diced) 100 g
cucumber (washed and diced) 150 g
rehydrated shiitake mushrooms (diced and blanched) 75 g
green peas (blanched) 75 g
fresh ginger (minced) to taste
aromatic vinegar to taste
soy sauce to taste
refined salt to taste
sesame oil to taste
chili oil to taste
sesame paste to taste
doubanjiang (broad bean paste) to taste
mustard to taste
stock to taste
cooled boiled water a pinch

Instructions

1

Prepare the ingredients

Wash the cucumber, and dice the cucumber, ham, and shiitake mushrooms separately. Mince the fresh ginger. Blanch the shiitake mushrooms and green peas, and set aside.

2

Make the four cold sauces

Take 4 small bowls. In each bowl, mix a different flavored cold dressing: combine the minced ginger, aromatic vinegar, soy sauce, and sesame oil to make a ginger-vinegar sauce; whisk the sesame paste with refined salt and a little cooled boiled water to make a sesame paste sauce; stir the doubanjiang, chili oil, sesame oil, and stock into a spicy bean sauce; blend the mustard, soy sauce, aromatic vinegar, and sesame oil into a mustard sauce. Cook the noodles, rinse under cold water, and arrange them on a serving plate.

3

Plate and serve

Sprinkle the cucumber, ham, shiitake mushrooms, and green peas over the noodles, and bring the four prepared cold sauces to the table alongside.
