Make the broth
Put the chicken pieces, beef pieces, and carrot chunks into a pot with water. Bring to a boil over high heat, then reduce to a simmer over low heat to make a broth. Set aside.
Prepare the vegetables
Peel the onions, wash them, and cut into thin slices. Wash the tomatoes, remove the stems, and cut into quarters.
Sauté the base
Heat a thick-bottomed pan, add goose fat, and heat until warm. Add the sliced onions and stir-fry over low heat until pale yellow. Then, stir-fry the tomato quarters over high heat until well combined. Add them to the cooked meat and vegetable broth. After boiling for 10 minutes, remove the onions and tomatoes, blend them into a puree, and return to the pot. Sprinkle with pepper and prepare toasted bread crusts.
Finish
Bring the soup back to a boil and add the thin noodles. Cook for 5 minutes and season with salt to taste. Divide the toasted bread crusts evenly between two large bowls, pour in the soup, and serve.
