Fried Spring Rolls
A fried wheat-flour pastry from the Man Han Imperial Feast: spring roll wrappers filled and deep-fried until golden and crispy.

flour (mixed into a thin paste for sealing)

peanut oil (about 40 g actually used)

Make the flour paste
Place the flour in a bowl, add water, and stir into a thin paste.

Wrap the spring rolls
Divide the filling into 15 equal portions. Place each portion in the center of a spring roll wrapper, fold in the four sides, and roll into strips about 7 cm long and 1.5 cm wide. Brush the seam with the flour paste to seal, forming raw spring rolls.

Fry the spring rolls
Heat a wok and add the peanut oil. Heat to about 60% hot (roughly 150 °C / 300 °F), add the raw spring rolls, and fry until golden brown. Remove, drain off the oil, and arrange on a serving plate.
