Ingredients

self-rising flour 4-1/2 cups
sugar 3 tablespoons
shortening 1/2 cup
eggs 2
milk 1 cup
mashed sweet potatoes 3 cups
sugar 2 cups
eggs (lightly beaten) 3
evaporated milk 1 can (5 ounces)
butter (melted) 1/4 cup
all-purpose flour 3 tablespoons
vanilla extract 1 teaspoon
Oil (for deep-fat frying)
Confectioners’ sugar (optional)

Instructions

1

Make dough

In a large bowl, combine the flour and sugar; cut in the shortening until the mixture resembles coarse crumbs. Mix the eggs and milk; add to the crumb mixture and stir with a fork until a dough forms. Cover and refrigerate for several hours.

2

Make filling

In a large bowl, combine the seven filling ingredients; stir until smooth. Divide the dough into 25 portions. On a floured surface, roll each portion into a 5-inch circle.

3

Assemble pies

Spoon 2 tablespoons of filling onto half of each circle. Moisten the edges with water; fold the dough over the filling; press the edges with a fork to seal. Poke the top 4–5 times with a fork.

4

Fry

In an electric skillet, heat 1/2 inch of oil to 375°. Fry the pies in batches, 1 minute per side, until golden brown. Drain on paper towels. Dust with confectioners’ sugar if desired. Keep refrigerated.
