Ingredients

eggs 5
caster sugar 500 g
cake flour 120 g
cocoa powder 100 g
unsalted butter (melted) 250 g
walnuts (shelled and chopped) 30 g
dark chocolate (roughly chopped) 30 g
icing sugar (for frosting, sifted) 200 g
unsalted butter (for frosting, room temperature) 75 g
cocoa powder (for frosting, sifted) 30 g
cream cheese (for frosting, refrigerated) 150 g

Instructions

1

Make the brownie batter

Preheat the oven to 170°C (325°F) Gas 3. Place the eggs and sugar in a large bowl and beat with an electric whisk until soft and fluffy. Add the cake flour and cocoa powder and continue beating until all the ingredients are thoroughly combined. Pour in the melted butter and mix until smooth. Fold in the walnuts and dark chocolate by hand until evenly distributed.

2

Bake

Spoon the mixture into a 33×23×5 cm baking tin lined with baking paper and bake in the preheated oven for about 30–35 minutes until the surface is firm but the centre is still soft. Remove and leave to cool completely.

3

Make the frosting

Place the icing sugar, butter and cocoa powder in a stand mixer fitted with the paddle attachment and beat on medium-low speed until combined. Add the cream cheese all at once and beat until fully incorporated. Increase the mixer speed to medium-high and continue beating for at least 5 minutes until the frosting is light and fluffy. Do not over-beat, or it will become runny.

4

Decorate

Once the brownie is completely cool, spread the frosting over the top.
